backpack and volunteer?

If anyone knows of any reputable organizations please let me know. I'm fluent in English and can get by in French. These Organizations would have to be able to accept Canadians. America perhaps Europe somewhere. I mean there is alot out there but I don't have a clue where to start. I just know I don't want to do missionary work. Perhaps if I could find places that take Canadians without specific skills. There is really so much stuff out there it's hard to narrow it down.
