I have a list of international cuisine I have tried to sort out somewhat geographicaly:

For international snacks, see also:

While the world is very multi-cultural, national dishes will always be a part of certain areas, and as you suggest, not necessarily political borders. An interesting project, I can help next week.

Hi. This is very interesting! According to my scholars, there are 7 continents on our planet:

1. Africa (separated from Asia by the Suez Canal, and from Europe by Gibraltar Strait); then can perhaps be broken into: North Africa (incl. the Sahara) and Sub-Saharan Africa (south of the Sahara or the Tropic of Cancer). If Ethiopia, Eritrea and Djibouti are in North Africa, then they should be SO. With the rest of Africa, it gets really complex. And how do you want to treat Madeira, the Canaries, Cabo Verde and the Spanish enclaves of Melilla and Ceuta?

2. Asia (separated from Africa as above, from Europe by the Ural Mountains, Caspian Sea, the Caucasus, and Bosfor and Dardanelle straits, and from Australia by the Lombok strait). This one is the most interesting. I guess you could do: Siberian, Middle Eastern, Central Asian (the -stan countries), China (well, well - there would be differences within this country itself; like Northern, Sichuan, Cantonese, etc), Tibet and the Himalayas, South East Asia (with or without India - and SO might be: Thailand, Vietnam, Malaysia, Bali, Indonesia, Philippines), and finally Korea and Japan.

3. Australia & Oceania (food might be different on many insular countries)

4. Europe, I guess can be broken by: Western (IE, GB, FR, NL, LX, BE, DE, OS, FL), Northern (DK, SE, NO, FI, EE, IS), Central (PL, CZ, SK, LU, LV, HU), Eastern (RU, BY, UA, MD), Southern (all the rest). The cuisine in Europe is so diverse, you would have fund trying to group or SO the countries.

5. North America (separated from South America by the Panama Canal), and can be broken by the North (GL, CA, US), Central (MX, GT, NI, HN, BZ, CR, PA), Caribbean (with questions raised over Aruba, Curacao, Bonaire, Trinidad & Tobago - if they are Carib or South America but nicely SO for Bahamas, Cuba, Haiti, Jamaica, and Trinidad).

6. South America (where Argentinean food is different from Peruvian, from Chilean, from Brazilian, from Islas Malvinas (the Falklands), from Surinamese (whose cuisine together with Guyana and Guiana is more Carib than South American) - plus in Brazil the differences would be vast between the Amazonian and the eastern states.

7. Antarctica (hmm...)

I am not sure if I helped or confused you more... Anyway, let me know your thoughts.

Kind regards,

Krys

Krys, a very good breakdown by an experienced traveller is useful in this case. I think food on Antarctica must be a lot like the NASA 'space food'? They can hardly go fishing like in the Arctic!

Tashi, see also some keywords, tips and favorite dishes at our GLOBO discussions but I am wondering if you really would like some of that 'genuine' international food?

I spotted two errors in my first response...

in Western Europe LX should have been LU for Luxembourg and in Central LU should be LT for Lithuania!!

I don't think i can add much more after such Brilliant separation KRISEK did, maybe Mongolian in central Asia and Nepal (very spicy) in Himalayan region; Sri Lanka ( formerly Ceylon) , Taiwan , Myanmar, Laos, Bhutan, Pakistan, then such different parts of India itself , northern and southern , Punjab; then Cambodia ,Singapore , New Zealand - different cuisine than Australian, , and as Chris suggested every country , even the smallest would definitely be proud of having unique cuisines in different parts within it's borders, i mean, how good is that!

i think only the "fattest " cook books dedicated by countries - regions would only try to give what You guys ask for, i think personally after visiting many multicultural or strictly dedicated restaurants in Sydney, it is going to be hard task, i can only tell that for example 'normal' Chinese meal is different in NY , Singapore, Sydney , or Melbourne , or somewhere in Europe , even when its cooked by Chinese people (checked) it's also matter of quality of ingredients as well as personal preferences of each "Chef" , well , ,,, good luck food lovers.

Thanx for the help... but... before we get carried away and name every country.. that is NOT what I'm looking for.

I realize there are 7 continents, but unless Penguin is on the menu I don't think there is a regional food.. :O)

so... to make this a bit easier to understand.. 6 continents.. many countries.. I'm looking for at least a min of 5 max of 7 Distinct food regions.. Maybe 10 in Europe.

I don't need to get technical on the areas of the continents, just the general regions.. ie: N,S,E,W Africa.

My project is as follows..

7 continent menu minus Antarctica

each continent has a separate menu.

MINIMUM 5 distinct food regions, Max. 7-10 depending on the continent.

IE: African Continent..

DISTINCT FOOD REGION

South (don't know if there is a distinction within)

West (Ghana, Nigeria, Senegal)--(SO)The rest of W Africa shares the same type of food.

North (Tunisia, Morocco, Egypt)--(SO) Libya and Algeria are not (SO) because the food is similar to the mentioned countries.

East (Ethiopia)--(SO)

North American Continent

Distinct Food Region

Canada--Maritimes

Greenland ???

USA-Southern States (MISS,LA,TX,AL)

Maybe California??? maybe East Coast?? I think the food is similar though.

Asian Continent

Distinct Food Region

China

Japan

Korea

Vietnamese

Thai

I hope that clarifies things a bit.

The country I'm featuring that week or month will be the Menu special..

Thanks for making the idea clearer. What you asking is difficult because food does not have borders and most the political borders today are wrongly drawn anyway. Large confederations make up many different cultures and religions and usually it is the local regions resources that determine what is available (meat, veggies, spices) to cook and what type of kitchens or facilities are available, often open fire is needed! Breakdown by geological continent is silly.

Rather consider cultural regions and themes like these 10 general groups:

Caravan World: Islamic and Jewish world of the Middle East & North Africa

Ottoman Empire: Turkish, Greek and Balkan food

The Far East: Chinese, Japanese (sushi), SW-Asian dishes

West Mediterranean: Italian, Spanish, Portuguese

Europa Europa: French, German, Scanenavian, British, other EU, Russian

Dark Africa: west, central and southern Africa

Wild West: USA, Mexico, Canada

Rumba Samba: Central and South American food

Caribbic Island: Creole food

Polar Ice: Fish from Arctic or Antarctic, Inuit (including Eskimo) food.

You state Canadian food as one type but did you know that the food in Quebec is very different to that of British Columbia or of the far north?

Even the smallest country has two vastly different menues. A Kosovo Albanian cooks differently to a Kosovo Serbian.

Did you consider that cooking facilities (example grill or deepfry) equipment, methods and dishes and cutlery are very different diverse. You are going to need a pretty big well equiped kitchen for your food to be authentic. Example, if you wanted to do a Swiss week you will need to invest in fondue pots and scewers.

Religion: most people are of one or another kind of belief. There are certain quality rules and taboos in a lot of regions but I am sure you have studied that. Fish on Friday?

Some examples of cross-border food:

Texmex (Mexico and SW-USA)

Creole (many islands)

Mid-Southeast- Asian food (Thailand, Vietnam, Phillipines)

Islamic (halal) food: from Morocco, thru Tunesia, Egypt the Middle East and all countries ending in –stan. I find Israeli food (kosher) very similar.

Inuit food: Alaska, North Canada, Greenland, North Russia (Antarctic/Arctic you could call your 7th continent food, Polar Food :-)

While most travellers are often good cooks themselves you are asking the wrong sector for professional help in this field. I don’t want to regurgitate ideas from other sites but here are useful links from professional chefs you will find very useful:
