I am thinking about getting a work permit for a work holiday trip to New Zealand. Can anyone tell me how I would start to set up jobs before I arrive there. I am not close to being able to fly out yet but I still want to get all my info on the how tos.

There are quite a few agencies that can do all that for you, a garanteed job, permit etc..
If that doesn't appeal to you then there's a few books out there that can give you a list of contacts.
1 is called 'work your way around the world'
and another worth looking at is the lonely planet gap year book. Depending on how good your bookshop is you may even find a guide that is NZ specific. Try looking on Amazon.
OK... so I live in Switzerland, but I am a New ZEalander. Avoid any book written or produced in bulk like Lonely Planet, Frommers, etc etc... they all give the same over prescribed information and won't really help you at all.
What I suggest you do for a start is visit the Govt website at http://www.govt.nz and check out the link to their empoyment and immigration sites.
Next, have a look at http://www.newzealand-focus.com which is a great site with heaps of onformation on over 105 New Zealand destinations. Work out where you want to go. New Zealand Focus also has links to all of the official tourism sites for each area. On these sites you will often find information about work for travellers.
If you want to go to an area with lots of Horticultural work, I would suggest the Nelson region. Plenty of Berry and fruit picking in season.
If you by chance speak German, Korean, or Japanese, you could easily find work in a restaurant or hotel.
Just be sure to check out your particular permit requirements on the government websites before you go.
