You are right: By means of the notches on the coaster the Köbes (Düsseldorf dialect for Kellner / waiter) knows how much glases of beer you had. Please consider, that there might have been one or more Co-drinker: In Düsseldorf's home-breweries it is usual to use just one coaster for the notches of the whole 'convivial gathering'.
